Easy Chana Masala Recipe | Home Made Food
Chana Masala is one of the most popular dish among northern cuisine. For western people, it is well known as chickpeas cooked in spicy and tangy tomato based sauce. So, here I am going to discuss its recipe so that you can easily cook at your home. It might not give you a feel of mother’s cooking but will surely entertain your taste buds.
Ingredients:
4 roughly chopped medium garlic
1 inch peeled and roughly chopped ginger
1-5 roughly chopped thai chillies for taste
30 ml lemon juice
30 ml vegetable oil
Salt according to taste
1 teaspoon whole cumin seed
2 teaspoons black mustard seeds
Finely chopped one large onion
2 teaspoons ground coriander
1/4 teaspoon baking soda powder
1/2 teaspoon ground black pepper
1/2 teaspoon ground turmeric
1 1/2 teaspoon homemade garam masala
1 can whole peeled tomatoes
2 cans drained and rinsed chickpeas
1 cup roughly chopped cilantro leaves
How to Cook:
Step 1: Add garlic, chillies, salt, ginger and 1 tablespoon lemon juice in a food processor bowl and produce a fine paste by grinding it. Keep this paste for after use.
Step2: Now, heat the vegetable oil in a large sauce pan until shimmering. Add mustard and cumin seed together at once. One you start feeling their aroma, immediately add chopped onions along with little baking soda and stir it well. Cook it for at least 3-4 minutes until onion gets light brown coating. Add little water so that onion don’t stick to the bottom of the pan and keep cooking. It will take almost 10 minutes to get these onions deep brown.
Step3: Now, add the earlier prepared ginger garlic paste and stir well to mix. Further, add coriander, turmeric powder, black pepper and 1 tablespoon of garam masala and stir it for at least 30 minutes. Next, add tomatoes and crush them into mixture with potato masher.
Step4: After mixing the above mixture well and cooking for some seconds, add drained and rinsed chickpeas and cilantro along 1/2 cup of water.
Step5: Bring it to simmer covered with slightly cracked lid to allow gentle bubbling in the pan. Cook for at least 30 minutes and keep stirring occasionally until the liquid turns into thick stew.
Step6: Finally stir in some garam masala and remaining lemon juice. Season it with salt and sprinkle garnished cilantro leaves and chopped onion rings.
The Chana Masala is ready!! Serve it with rice or naan. Enjoy.
