White Pepper is also a fruit of the pepper plant like black pepper but they both are processes differently. Black Pepper is picked when they are almost ripe and sun dried, turning the outer layer black. To produce white pepper, this outer layer is removed before or after drying leaving only the inner seed. White Pepper is more aromatic and has more spice and it is bitter than black peppers. White pepper is mostly used in American Kitchen or we can say in American dishes. It is also used in French cookery in light colored dishes for aesthetic reasons such as white sauces and mashed potatoes. It is also used in some cuisines for its specific flavor. It is also used in Chinese cooking and in aromatic Vietnamese soups and pork dishes as well as in many Swedish dishes.
